日本產量第一、德島縣最知名的阿波尾雞.
阿波尾雞是德島縣最知名的食材,這種產於德島的地雞為日本產量第一,肉色略帶微紅,低脂肪並具有爽脆嫩滑的口感、肉味香濃,決定雞肉好吃的谷氨酸含量達到了3.17,這一數據高出其他雞種。

有關阿波尾雞名稱,其實係來自德島每年夏天嘅阿波舞祭,因「阿波舞」同「阿波尾」日文發音相同而被命名。是日本具有代表性的雞品種。

所謂「阿波尾雞」,是德島縣畜產研究所花了十年時間,得出來肉質優良的雞隻(雞種:阿波土雞X白普利茅斯洛克雞)。於昭和時期,經過10年時間的養殖、配種,選拔了體質強健且繁殖能力高的走地雞隻,成為今天的阿波尾雞。與其他縣產的雞隻比較,阿波尾雞的發育速度、體重、飼料上也有更高要求。

阿波尾雞是為德島豐富的自然環境中悠閒地飼養,出生日28日起,每一平方公尺飼養十隻以下。採取放養,飲用安心安全的自來水,無激素、無抗生素、無合成抗菌劑、全天然飼料,飼育天數必須為80日以上。

阿波尾雞的雞冠筆直,尾巴可愛,口感十足,低脂味濃,可以配合各種煮食方法配搭成美味的料理,從炸雞火鍋到法國料理均能滿足,是日本全國聞名的德島縣特產。

處理方法:
在食用前半日至一日,預先將食物由冰格移至冷藏格;再於烹調前十五分鐘從雪櫃取出,於室溫下解凍,可避免食物承受激烈溫差,以免空氣及水份流失,保存更高營養價值。
解凍後,加上鹽、胡椒、香草等調味,放入氣炸煱焗爐或香煎,方便又美味!

Preparation:
